I feel said at the moment, Mr or Mrs prickles has not been in my garden to feed. Every night there eat cat food at around the same time. The the past three nights the food has not gone. I always change the food in the morning. Does this normally happen as I am getting worried.

Don’t worry too much, hedgehogs to tend to disappear from people’s gardens from time to time – for all sorts of reasons. Thankfully they usually seem to return again – although, at this time of year, it may not be until after hibernation.
I would continue to leave some food and water out in case that hedgehog or another one turns up.
